Details

The olive grove in Haute-Provence from Gaec La Borie, is made up of around 3.200 trees over an area of more than 8 hectares. It has an ideal orientation and forms a dale crossed by the bed of a small river. Some of the olive trees were planted around 22 years ago and are mostly of the Aglandau, Frantoio and Bouteillan varieties, cultivated by the Drac family all year round for our immense pleasure.

The last harvest was in beginning November. The olives were pressed just a couple of hours after being picked in the Moulin de la Fine at the foot of Luberon to obtain 650 litres of an outstanding extra virgin olive oil.

Aromatic palette: Fruity green which presents on the nose notes of artichoke mixed with notes of pear and red fruits.

In the mouth: the oil is sweet at first, then we feel hints of bitterness and astringency. We find notes of green banana peel.

Gourmet pairings: as a finish with baked seasonal vegetables, white fish, in salads.
