Tonka beans are very fragrant, gives off warm and sweet notes reminiscent of the scents of sweet almond and cut hay. A closer look reveals creamy notes of leather, wax, almond and vanilla. Some will perceive a touch of caramel, tobacco or honey.

Tonka bean belongs to the Fabaceae family. It is contained in the fruit of Brazilian teak (precious and rotproof tropical wood).  It has long been used in cosmetics and more particularly in perfumery, and has only recently conquered our plates.

A perfect combination : Tonka bean can be used finely grated: it perfectly enhances creams, pastries and cakes. Bewitching, a little enigmatic; the Tonka bean is particularly appreciated by pastry and chocolate makers. It is subtly combined with chocolate and fruit-based desserts. The result is astonishing combinations of flavors.

In the salty register, Tonka beans are used whole or broken, during long cooking (For example : pork cheek or beef stew). Tonka Bean is the ideal accompaniment to seafood, shellfish (lobsters and langoustines) or a carpaccio of scallops... Simply put, why not enhance an eggplant or parsnip purée with Tonka beans ?
