Today, the bay leaf is a staple in the kitchen. It lends itself well to anything that simmers in a large pot, stews, and sauces of all kinds. It pleasantly enhances soups made with legumes or tomatoes. It is also an essential ingredient in lentil dishes. Bay leaves can be used as an infusion for a soothing herbal tea that promotes digestion.

SPECIAL TIP: Add a few leaves to cooking water for extra flavourful pasta or rice. Add a bay leaf or two to flavour your favourite olive oil. Delicious when drizzled over pasta or a pizza before serving.
