A Southern alliance! An apricot from Roussillon or Provence with wild organic thyme from the Hérault producer, there couldn't be a more local combination. We like the tangy side of the apricot with the herbaceous hint of thyme. The whole thing perfectly enhances triple-cream cheeses. And to travel even further, we roll the cheese with confit of pastry sheet and make... spring rolls! Baked, they make a delicious aperitif or accompaniment to raw vegetables for an evening meal.

Ingredients:

Apricots 51% (EU and non-EU origin), sugars extracted from fruits, cane sugar, thyme 1.6%, white Pays d'Oc wine, gelling agent: fruit pectin, concentrated lemon juice.
