The first harvest of honey presents beautiful notes of wild berries, cherry trees and other flowers. Tasty taste of green apple and beeswax with a side of barley sugar!
Description of taste
Harvested at the end of July, with a fine and delicate taste, summer honey is a real floral taste explosion. Made mainly from clover, linden, brassica and wild raspberry flowers, it is also composed of a multitude of wild flowers, abundant in the Hautes-Laurentides in July. A fresh, minty taste from the nectar of the lime tree is also noticeable. The harvest also contains honeydew, resulting in a lighter brown color and a slightly caramelized taste.
Never filtered or heated, raw honey is excellent for health, as it still contains traces of pollen, propolis and beeswax and preserves its original properties and aromas. Freshly harvested, it is in a liquid state. It will then crystallize quickly and nicely given the absence of heat during the extraction process.
