The MIYABI Birchwood 5000MCD Gyutoh 6.5 inch represents the highest level of Japanese knife craftsmanship, combining extraordinary performance with refined natural beauty. Designed for precise slicing, chopping and rocking motions, this Gyutoh offers the versatility of a Western chef’s knife with the finesse of a traditional Japanese blade.

At its core is SG2 micro carbide powder steel, prized for its exceptional sharpness and long lasting edge retention. The blade is protected by 101 layers of steel, forming a striking flower Damascus pattern that enhances durability while showcasing artisanal craftsmanship. Ice hardened using the CRYODUR process, the blade reaches an impressive hardness of 63 HRC, delivering scalpel like precision.

Each blade is hand honed using the traditional three step Honbazuke process, creating an ultra fine edge sharpened to approximately 9.5 to 12 degrees. The authentic thin Japanese blade profile allows for effortless, clean cuts across vegetables, proteins and delicate ingredients.

The handle is crafted from Karelian Masur birch, a rare and highly prized wood known for its distinctive grain and durability. Ergonomically shaped and beautifully balanced, it provides a secure, comfortable grip. Rounded spine and heel details further enhance comfort during extended prep sessions.

Handcrafted in Seki, Japan, this knife is both a high performance tool and a work of culinary art.
